Lime and Berry Chia Pudding

Chia Pudding
 2 cups Kefir
 6 tbsp Chia seeds
 1 Lime, juiced
 ¼ cup Maple syrup
Spiced Berries
 3 cups Frozen Berries (mixed variety)
 ½ Lemon, juiced
 1 tsp Cinnamon
 ¼ tsp Turmeric
 1 pinch All spice
 1 tbsp Maple syrup
 1 tsp Vanilla
Topping
 1 cup Frozen berries

Combine all the chia pudding ingredients to a glass mixing bowl and stir to combine well.

Cover and place in the fridge to sit for at least 3 hours, preferably do this overnight. As it is sitting give it a couple of stirs every now and then.

To make the baked berries Preheat an oven to 180 degrees.

Line a baking tray with baking paper. Ensure the baking paper comes up the sides of the tray to capture all the juices from the berries.

In a bowl combine all ingredients for the baked berries, toss the berries with a spoon so that they are covered with the vanilla, syrup and spices.

Place the berries on to the tray and bake in the oven for 20 minutes. Keep an eye on them towards the end of cooking time so they don't burn. Take them out prior if you think they are done, this will be when there is plenty of juice and the berries are slightly roasted.

Once cooked, set aside to cool. Once cooled store in an airtight container until ready to use.

Once you have both elements for your chia pudding ready (both the berries and soaked chia seeds) spoon the some of the chia seeds in to either a mason jar or a glass one third of the way up. Spoon in some of the baked berries along with the juices and top again with soaked chia. Repeat for another 4 – 6 serves (depending on the glass size).

Top with some frozen berries or your preferred choice of topping.
